Carlos Cadena represents the fifth generation of coffee producers in his family, continuing a legacy shaped by both tradition and innovation. His father was the one who began moving away from conventional commodity coffee, gradually transforming the farm through replanting new varieties and improved pruning techniques. A turning point came in 2012, when he placed 6th in the Taza Excelencia Mexico competition, sparking a deeper focus on quality and experimentation. With more experience, this journey led to a 3rd place finish at the Cup of Excellence in 2023 with a Gesha and Pacamara blend.
The farm dates back to around 1950, when his grandfather first acquired it. After his passing, his young mother took over and maintained traditional practices, including growing Typica. Later, his father modernized the farm, and he further refined it by separating varieties and improving processing. The coffees grown here stand out for their floral, sweet, and balanced profile, shaped by the farm’s unique setting on a ravine with rich soil, steady rainfall, and diverse surrounding trees.
This coffee is a honey-processed Mundo Maya from Finca Pocitos. Harvested at 26° Brix, it is floated and sorted, rested for 16 hours, then depulped and fermented anaerobically for 48 hours. Afterward, it is transported to the drying area and dried on African beds for 8 days, resulting in a aromatic, sweet, and complex cup.
